Maitake / Hen of the Woods - apparently known in Japan as the 'dancing mushroom', the story goes people were so excited when they found one in the wild they did a little dance.

Maitake has an earthy, peppery flavour and is best when pulled apart into 2-3cm pieces and sautéed over high heat in a little butter.
